Chicken Yakitori


Yakitori refers to Japan's skewer food but it is usually grilled chicken. It is made from chicken meat and chicken liver. While it is being grilled, it is brushed with yakitori sauce consisting of sake, mirin, sugar, dark soy sauce, tamarind soy sauce, and pepper. Aside than the chicken, leeks are usually included but other vegetables are acceptable too. 
Other than the delightfully sweet and salty taste of the sauce, it is further enchanced by the smoky taste that it gets from the grill. This dish is very analogous to how the Japanese are. The clean and equal cuts of the meat to the vegetables shows the precision and uniformity in which the country is so famous for.
Here is our version of this dish:

Ingredients:
Chicken breast
Bell peppers
Sake
Mirin
Sugar
Dark soy sauce
Tamarind soy sauce
Pepper
Salt

Procedure:
1.) Mix the sake, mirin, sugar, dark soy sauce, and tamarind soy sauce together. Season with salt and pepper. Marinate your chicken with this mixture for 25-30 minutes.
2.) Cut the vegetables and the chicken into equal portions. Make sure that when they are all skewered, they are all in equal parts. Fire up your grill but don't forget to brush some oil on the grates before you start.

3.) If you're using bamboo barbecue sticks, soak them in water to avoid burning them.
4.) Brush them whenever you turn to really soak in the marinade.
