Green Tea Ice Cream

We are all too familiar with iced tea but have you ever tasted actual green tea? Some may like it because of its therapeutic effects, while others cringe upon hearing the name of the drink but have you ever thought of eating green tea-flavored ice cream on top of a mochi ball? Well, don’t judge yet! Green tea as an ice cream flavor may sound weird at first but knock it until you have tried it. If you don’t like the taste of green tea, this uniquely flavoured ice cream will liberate you from your initial experience with said drink. However, if you’re a tea lover in general, then this makes things better for you!

For the ice cream recipe:
Green Tea Ice Cream (Matcha Aisukuriimu)
Ingredients:
2 ¼ oz(75grams) Green Tea Powder
1/3 cup(75 ml) cognac/brandy
5 cups(1 ¼ liters) fresh milk
1 cup(250ml) Heavy cream
1 1/3 cup(100g) skimmed milk powder
1 ¾ cups (350g) sugar
Procedure:
1.) Place the geen tea powder in a bowl, add the cognac and mix well.
2.) Pour the fresh milk, cream, milk powder and sugar into another bowl and mix well. Transfer to a sauce pan and bring to a boil over moderate heat. Remove from the heat and allow to cool to a lukewarm temperature, then add the green tea mixture and mix well.
3.) Chill immediately in the freezer portion of the refrigerator until ice crystals start to form around the edges of the container. Pour the mixture into a blender or food processor and blend to a few seconds to break up the crystals. Leave the mixture to freeze in a plastic container.

Note: Alternatively, pour the cooked mixture(step2) into one gallon ice cream maker.
Makes 5 pints.
