Salt and Pepper Spareribs

This Chinese dish is widely known in the Philippines but why if you may ask? It is because it perfectly suits the Filipino taste! It's nothing racist really. Come to think of it, who wouldn't like spareribs marinated and then deep-fried into perfection? Want to learn how to create this delectable dish? Then read on homie!

Ingredients:
Marinade:
1 tbsp light soy sauce
1 tsp sugar
1 tbsp chinese rice wine or dry sherry if not available
Ground black pepper

500g Pork Ribs, chopped
Onions
Garlic
Ginger
1 Red Chill
Spring onions
Potato flour
Water
Sweet potato powder
Salt
Five spice
Black vinegar

Procedure:
1.) Mix all the ingredients for the marinade together and add them to the ribs. Refrigerate for two hours or even overnight if you wish!
2.) Add some potato flour and water and mix them all. Coat the pork with potato flour.
3.) Heat the oil in a saucepan and deep fry the ribs until golden brown.
4.) Drain the, and set aside.
5.) In another pan, stir fry all the vegetables and spices, putting in the garlic last.
6.) In the pan used for the pork, heat some oil to re-fry the ribs for more crispiness.
7.) Drain the ribs and put them in with the vegetables and spices. Toss and stir-fry in very hot heat.
